I would use "that" - I would only use "it" when being shown the item that had been purchased not just being talked about.

1. How about this sentence? Can either fit? Can a change of the person influence the choice of the pronoun?
-He has sold his car and this/that is the reason why he takes his dad’s.
-I've sold my car and this/that is the reason why I take my dad’s.

2. Can there be three possible contexts for such a question?
-What do you think about that/this/it?

Saying "that is" would be very formal and is not used in normal conversation.

Yes, "this" in both cases. Though, interestingly, in the second example, if the person was standing beside me when I found the facebook picture, I would point at the screen and ask "where did you find that".

I think the difference is remoteness. "This" is for something that you hold in your hand or is there with you (and the photo would be there with the FB group), that is for something further away that you might point at. However, as always in English, there will be exceptions and some people will say it differently to others.

meet with vs. meet up with

Say I spent a great time with my friends last time and can I say "I met with my friends last night'? Or do I need to say 'I met up with my friends last night?'
I'm asking because I watched two different native speakers and one said "I met with..." and the other, as you can see in the screen, said you use "meet up with" for social meetings and "meet with" for business/formal meetings. Who is wrong?
